VEGAN PUMPKIN SPICE NO BAKE PROTEIN BITES.
I saw an entire section in trader joe's dedicated to pumpkin flavored treats and I knew i had my next snack idea.
I am the queen of being hangry when I don't have at least of five meals throughout the day. For me that means 2-3 snacks which typically keeps me sane and since switching to a plant based diet, I've tried to incorporate protein packed snacks whenever possible. So this week I couldn't think of a better way to incorporate my love of all things fall flavored and protein packed snacking than to tackle a new recipe! I present to you my vegan no bake bites that are filled with tons of flavor and easy to whip together.
- 9 Medjool dates, pitted and soaked for 20 minutes
- 1/2 Cup Applesauce
- 1/8 cup Pumpkin Puree
- 2 tbsp Vanilla Unsweetened Almond Milk
- 2 tbsp Trader Joe's Pumpkin Spice Almond Drink
- 3/4 cup Coconut Flour
- 1.5 Scoops (30-50 g) Vanilla Perfect Fit Protein Powder
- 1 tsp Cinnamon
- 1/2 tsp Almond extract
